A Foolproof Method for Homemade Vegan Mayo

Vegan mayonnaise has become increasingly popular and making it at home can be incredibly easy. In only two minutes with an immersion blender, a few key ingredients and some simple instructions, you too can make delicious vegan homemade mayonnaise!

The first step is to gather up the tools you will need. An immersion blender is integral for this recipe as it fits easily into a mason jar, allowing for quick and easy clean-up when you’re done. You will also need a set of measuring spoons and a ¼ cup measuring cup. Be sure that your immersion blender is set to high speed before beginning – this will ensure a smooth result!

Next, you’ll need the main ingredient: Aquafaba. This liquid is the juice from a can of beans and is essential in making vegan mayonnaise. While chickpeas are usually used, any white bean with light aquafaba will work! Once you’ve opened your canned beans, strain the liquid over a bowl and save it in a jar for later use. Aside from homemade mayo, aquafaba can also be whipped up to make vegan whipped cream or used to air fry potatoes without using oil – it’s pretty versatile stuff!

Once you have all of your ingredients together, measure out ¾ cup (not three quarters of the jar!) of your favorite light oil such as grapeseed, extra-light olive oil, or peanut oil – no extra virgin oils with strong flavors here! Then add one quarter teaspoon salt, one teaspoon of apple cider vinegar, one and a half teaspoons of lemon juice, and one quarter teaspoon of Dijon mustard and, then top off with three tablespoons of aquafaba.

Now comes the fun part: blending! Place all these ingredients in your mason jar and insert your immersion blender until it reaches the bottom. Turn it on at full speed for about 10 seconds until everything has blended together nice and creamy – voila! Your homemade vegan mayo is ready to enjoy straight away or store in an airtight container in the fridge for use later on.
